A burger with tomatoes, lettuce and cheese.

Lentil Vegetarian Burger with Roasted Bell Pepper (The Domestic Geek’s Recipe)

Ingredients:

  • 1 onion – finely diced and caramelized

  • 2 cups lentils – cooked

  • 1 tbsp balsamic vinegar

  • ½ cup breadcrumbs

  • 1 garlic clove – minced

  • 2 tsp thyme

  • 1 egg

  • oil

Toppings:

  • Goat cheese

  • Salad or Sprouts

  • Roasted Red Pepper slices

Instructions:

      1. In a large bowl, mix all ingredients together.

      1. Divide mixture and shape into burger patties.

      1. Place on a parchment lined baking sheet and refrigerate for at least 30 minutes.

      1. On a well oiled pan or grill, fry patties until golden and inside is cooked through.

      1. Assemble with desired toppings and enjoy!

Prep time: 40 min

Total time: 50 min

Notes:

  • If you want to store your burger patties you can do so and they will last in your freezer for about 3 months. Also, if you decide to store them in the freezer, you can wait until they freeze and then move them to a zip lock bag in order for them to take less space in your freezer.

Tip: You can use feta cheese instead of goat cheese. And you can also use any other kind of toppings on your burger. It’s all up to your personal taste…
