Ingredients:

1 onion – finely diced and caramelized

2 cups lentils – cooked

1 tbsp balsamic vinegar

½ cup breadcrumbs

1 garlic clove – minced

2 tsp thyme

1 egg

Toppings:

Goat cheese
-
Salad or Sprouts

Roasted Red Pepper slices
Instructions:

In a large bowl, mix all ingredients together.

Divide mixture and shape into burger patties.

Place on a parchment lined baking sheet and refrigerate for at least 30 minutes.

On a well oiled pan or grill, fry patties until golden and inside is cooked through.

Assemble with desired toppings and enjoy!

Notes:

If you want to store your burger patties you can do so and they will last in your freezer for about 3 months. Also, if you decide to store them in the freezer, you can wait until they freeze and then move them to a zip lock bag in order for them to take less space in your freezer.

Tip: You can use feta cheese instead of goat cheese. And you can also use any other kind of toppings on your burger. It’s all up to your personal taste…
