Gingerbread Cookies Christmas Tree

Ingredients:

  • 100 gr sugar
  • 170 gr molasses
  • 1-1/2 tsp ground ginger
  • 1 tsp ground cinnamon
  • one tsp ground allspice
  • 1 tsp ground cloves
  • 2 tsp baking soda
  • 113 gr margarine (1 stick)
  • 1 egg, beaten
  • 384 gr all-purpose flour

 

For the royal icing:

 

  • 125 gr powdered sugar (confectioners sugar or icing sugar)
  • 1-2 tbsp milk
  • 1/2 tsp vanilla

Instructions Gingerbread Cookies Christmas Tree:

The cookies:

  1. In a large saucepan, combine sugar, molasses, ginger, cinnamon, allspice and cloves. Also bring to a boil over medium-high heat stirring occasionally.
  2. Once it comes to a boil, remove from heat and whisk in baking soda. Mixture will foam up.
  3. Add in margarine and stir until melted.
  4. Whisk in egg and finally mix in flour.
  5. Put onto a floured surface and knead until mixture becomes workable and smooth (about 1 minute).
  6. Divide dough in half and roll out on aluminium foil to just under 50 millimeters thick.
  7. Cut 2 cookies for each size of cutter in the 6 pieces star cookie cutter set.
  8. Remove excess dough from around stars and bake in a preheated 162 degrees Celsius oven for 10-12 minutes.
  9. Let cool for a few minutes on the foil and remove to a wire rack to cool completely.   

 

The royal icing:

 

  1. Mix until icing is a thick but workable consistency. When icing is drizzled on top of itself, it should settle back into itself with no trace.
  2. Put into a zip lock bag and snip the very corner off the bag.
  3. Decorate the cookies any way you see fit. Let dry for 20-30 minutes. Begin with one of the largest cookies and place onto a plate or platter. Put a dollop of icing in the center and put the second cookie of the same size on top, staggering the points. Let dry for a few minutes. Also repeat with remaining pieces in order from largest to smallest, staggering the points of the stars. Furthermore let dry for a few hours and then decorate with more royal icing or powdered sugar to give the effect of melting snow on the branches.

Notes Gingerbread Cookies Christmas Tree:  

 

  • If you want to use your tree as a decoration you can do so and it will last on your platter in your kitchen or living room for up to 5 days. You can still eat it at the end of these 5 days. Or you can leave it and use it only as a decoration and it will keep for about 1-2 months. Although it would be a shame to let such a tasty treat go to waste…
  • You can also use the royal icing as a glue to form this tree and use just the powdered sugar to decorate it!

 

Tip:  In addition You can use some Christmas cake decorations to decorate your tree as well. Just make it your own!
