Italian Sausage Egg Bake (Beth le Manach’s Recipe)

Ingredients:

  • Eggs – 12 eggs

  • Cottage Cheese – 460 gr (we used Ricotta Cheese and the taste was amazing!)

  • Melted Butter – 60 ml (2-3 tbsp of hard regular butter that you go ahead and melt)

  • Flour – 40 gr

  • Baking Soda – 1 Tsp

  • Salt – ½ tsp (the amount it’s up to your taste really… this is just the amount we recommend for this recipe…)

  • Freshly Cracked Pepper – to taste

  • Olive Oil – 1 tbsp

  • Pork Italian Sausage – 3 sausages (removed from their casings and cooked through) / you can also replace the Italian sausage with any other sausage of your choice and it could even be a cured or smoked one… it’s entirely up to your preference. If you decide to replace the Italian one with any other type, then remember that whatever the texture of your sausage or the casing of it, you need to dice it as small as you can.

  • Italian Seasoning (just some dried basil, oregano, parsley and marjoram blend / equal parts) – ½ tsp

  • Fennel Seeds – ¼ Tsp

  • Roasted Peppers – 120 gr (we left the peppers out completely and even if we decided not to use them, the taste was nothing short of amazing…)

  • Grated Mozzarella Cheese – 250 gr (smoked cheese works just as well here and that’s what we used)

  • Fresh Basil – 2 tbsp (julienned) for garnishing / you could also leave it out if you desire… we did…

Instructions:

      1. Preheat oven to 176 degrees C.

      1. In a large skillet, heat olive oil in a pan. Remove sausage from its casings and sauté, breaking up with a wooden spoon and browning on all sides until cooked through. Add the Italian seasoning and the fennel seeds and mix everything very well then turn off the heat and transfer the sausage with a slotted spoon to a plate lined with a paper towel to drain. Set aside.

      1. In a large bowl, whisk together the eggs. Then add the cottage cheese, butter, flour, baking soda, salt, and pepper. 

      1. Stir in sausage, red peppers, and cheese. Pour into a greased skillet or 20 cm casserole dish. Bake for 30 mins or until set and cooked through. 

      1. Garnish with freshly chopped basil. Slice into wedges and serve!

Notes:

  • This recipe should serve about 8 people.

Tip: You can also garnish this with some crumbled or grated feta cheese and serve it with some sliced tomatoes drizzled with a little bit of olive oil.
